Skånsk Avec - a tribute to Saturnus' 130 years as a beverage producer
How do you celebrate 130 years of beverage production in Skåne? That was the question we asked ourselves when it was time for the anniversary. The thoughts and ideas were many, but in the end we landed in a Skånsk Avec. Right from the start, we have mainly focused on two things: Mulled wine production and Distillation. If you combine these, the result can be a liqueur. When we make a mulled wine, the process begins with adding various spices and seasonings to spirits and water. Cinnamon, cardamom, cloves, plums, figs and raisins are some of the spices we work with. The raisins came to play a leading role here. To be able to flavor mulled wine with raisins, we put these in alcohol and water for about 8 days.Then we strain the raisins and the liquid that remains is used as a flavoring for our mulled wine. We have thrown away the raisins. Until now.
By distilling the raisin residue from the mulled wine production instead, we have a spirit made from grape residues. Then you can immediately start drawing parallels to how wine growers in Italy (Grappa, France (Marc) and Germany (Tresterbrand) work with their leftovers from wine production. The raisin distillate was then left in Swedish oak barrels for 6 months and the result became a round grape spirit with barrel notes. The perfect accompaniment to coffee.
